Daisy All Day (Margarita)

Our mixologist, Charles Tappan, has renovated classic cocktails.

Glassware:  Chilled cocktail glass

Ingredients:

1.5 oz. Olmeca Altos Reposado

1 oz. Italicus

.75 oz. lime juice

.25oz. palm sugar syrup

2 dashes lavender bitters

Garnish:  Orange Twist

Directions:  Combine ingredients over ice in a shaker tin.  Shake, strain into a chilled cocktail glass, garnish, serve, and enjoy.

No tequila section of a cocktail mixlist could ever be complete without the G.O.A.T. – that is the Margarita.  With an often-debated history (as many people want to claim its invention), the fact is that the Margarita is the number one ordered cocktail in America.  In its purest form, the classic margarita is simple, elegant, and enlivening.  A renovation of this classic is no simple task.  It must be done with intention and respect.  Reposado tequila starts the foundation.  The light vanilla, baking spices and oak flavors create a great accompaniment to the flavors that will be added. Traditional orange liqueur is replaced by Italicus, which imbues the drink with the flavor of bergamot.  Lime juice adds a citrus backbone and cuts sweetness from the drink, while the coconut palm sugar syrup brings an earthy and comforting taste.  To pack just that little bit extra of a punch, lavender bitters are added.  The floral quality of the bitters heightens the bright citrus of the drink.  While paying respect and homage to the original, the Daisy all Day is a tipple that, like the original, can be ordered over and over again.
