Unique Dining Experiences: Dinner Beneath the Sea – Ithaa Undersea Restaurant

The Conrad Maldives Rangali Island resort is home to one of the world’s most iconic underwater dining experiences: Ithaa Undersea Restaurant. Opened in 2005, Ithaa is the world’s first all-glass underwater restaurant and remains one of the Maldives’ most distinctive culinary destinations. Constructed from transparent acrylic, the intimate structure places guests nearly 16 feet below the surface of the Indian Ocean, surrounded by a 270-degree panoramic view of the reef.

The restaurant doesn’t provide a view of the ocean – the ocean is the dining room. Rather than looking out through windows, diners are completely immersed in the marine environment, with coral gardens, tropical reef fish, rays, and other marine life continuously circling around and above them. During the day, shards of sunlight create a palette of turquoise and emerald. During the evening, lights illuminate a darker, more mysterious world as nocturnal marine life begins to emerge.

The experience begins before the first course is served. Guests make their way toward the restaurant and descend a staircase into the ocean. With seating limited to only fourteen guests, Ithaa feels like a private salon suspended beneath the Indian Ocean. There is a sense of seclusion. 

The culinary experience is designed to complement the extraordinary setting. Ithaa’s cuisine draws on contemporary international fine dining while incorporating Maldivian ingredients and the flavors of the surrounding waters. Seafood and locally inspired ingredients take center stage, paired with modern European techniques, refined sauces, delicate garnishes, and carefully considered wine pairings.

For guests seeking the most complete experience, the restaurant offers a tasting menu. The progression of courses is designed to unfold slowly against the underwater backdrop. Rather than simply being a meal, the tasting menu becomes a culinary journey through the flavors of the region. 

What makes Ithaa remarkable is the way that the setting and cuisine become inseparable. A course of beautifully prepared seafood arrives at the table while schools of fish glide overhead. A delicate dessert is served as the surrounding reef fades into the deep blue of evening. The result is a remarkable experience that combines fine dining, marine life, and the natural beauty of the Maldives into one single intimate event.
